CURED LEMON CREAM BOMBONS CURD

To make chocolates is very easy; I prepared the cream in the morning and in the evening I had it totally cold.
We prepare the chocolates; We melt the chocolate in a bain-marie, stir well with a wooden spoon until it is completely melted. We distribute like a teaspoon of the chocolate coffee melted in each shape (I used a silicone mold for chocolates), wait a few seconds for the chocolate to thicken a little and we turn over a tray or a fountain to pick up afterwards the excess.
We take the mold to the refrigerator until it hardens the chocolate.
If necessary we repeat the process to create a resistant layer (I did not need it), it has to be a layer without holes or we will get the filling. If you put a second layer on it again, cool it in the fridge again.
Remove the mold from the chocolates in the fridge and fill them with lemon curd and cover with the rest of the chocolate so that they are well sealed. We wait a minute and with a spatula we gently drip the remaining chocolate, so that when we unmold the chocolates are the perfect edges and not with chocolate chips around that would make them look bad. We take it back to the fridge (I eat it all night), and it only remains to unmold them and taste such a wonderful bite.
